Mmm, recipe - must share!

So tonight, Mike made Smoked Gouda Macaroni and Cheese for my friend Kelly W. and I and I just had to share - it was so delish!

1 (1-ounce) slice whole wheat bread
1 tbls butter
1/4 thinly sliced green onions
2 minced garlic cloves
2 tbls flour
2 cups skim milk
1/2 tsp salt
1/4 tsp pepper
1/2 cup (2 oz) shredded smoked gouda cheese
1/3 cup (approx 1 1/2 oz) grated fresh parm cheese
5 cups coarsely chopped fresh spinach
4 cups hot cooked elbow macaroni - we choose a funky version of pasta
cooking spray

Preheat oven to 350

Place bread in a food processor, and pulse 10 times or until coarse crumbs measure 1/2 cup.

Melt butter in a large saucepan over medium heat. Add onios and garlic; cook 1 minute. Add flour; cook 1 minute, stirring constantly. Gradually add milk, salt and pepper, stirring constantly with whisk until blended. Bring to a boil; cook until thick (about 2 minutes). Add cheese; stir until melted.

Add spinach and pasta to cheese sauce, stirring until well blended. Spoon mixture into a 2-quart baking dish coated with cooking spray. Sprinkle with breadcrumbs. Bake at 350 for 15 minutes or until bubbly.

We served this with aspargus that was baked for about 20 minutes sprinkled with olive oil and pepper.

I have been thinking about this dish since I read your post. Finally made this for dinner tonight. YUMMY! I think I may have super powers tomorrow. :)
